The Bolgheri Rosso “Sassi Sparsi” is produced by the winery Rocca delle Macie. The Zingarelli family, since the early 1970s, has dedicated itself to producing great wines in the splendid territory of Castellina in Chianti with the Estates: Le Macie, Sant’Alfonso, Riserva di Fizzano, and Le Tavolelle. To this initial core business in the Chianti Classico area, estates in Maremma Campomaccione and Casamaria were later added, along with the management of some vineyards in some areas of excellence in Tuscan viticulture. The Sassi Sparsi is produced in the territory of Bolgheri, with grapes from a vineyard owned by the Piccoli Cerbaro family. It is a parcel located near Castagneto Carducci, in a flat area characterized by clayey soils rich in skeleton. The Cabernet Sauvignon and Merlot grapes are harvested and vinified separately, following their distinct ripening times. The fermentations take place in temperature-controlled steel tanks, with a skin maceration lasting 8-10 days. The wine matures for several months in wooden barrels before being bottled.
