The Lallement Massonnot sparkling wine house has been engaged in Champagne production for over a century within the prestigious area of Montagne de Reims, where the Lallement family's adventure with the first vineyards in Bouilly began in the early 20th century. Until 1981, the family cultivated grapes destined for sale to the Courmas cooperative. However, following the marriage between Anne-Marie Massonnot and Francis Lallement three years earlier, the independent brand Lallement Massonot was founded. Xavier Lallement, the fifth generation of winemakers in the family, now leads the Maison. Together with his wife Marie, in 2015, they left their engineering jobs to dedicate themselves to the family business, producing high-quality Champagne.

Within the slightly over 5 hectares of Lallement Massonnot-owned vineyards, mainly classified as Premier Cru, Xavier Lallement cultivates the classic Champagne grape varieties: Chardonnay, Pinot Noir, and especially Pinot Meunier, which alone occupies 75% of the vineyard area. All plots are located within the Montagne de Reims area, particularly in the municipalities of Coulommes-la-Montagne, Pargny-lès-Reims, Saint-Euphrasie, and Gueux. They benefit from the characteristic oceanic and continental climate that distinguishes the region, as well as the clayey and sandy nature of the soils. Agronomic management is based on sustainable practices and agroecology, incorporating techniques such as cover cropping, tree planting, and limiting soil tillage. The grapes are hand-harvested and immediately pressed before the alcoholic fermentation of the must. The sparkling wine bases are skillfully blended in the search for the most balanced cuvée, which then undergoes bottle fermentation using the esteemed Method of Champenoise. The lees ageing ranges from 36 to 60 months, and the sparkling process concludes with disgorgement and subsequent dosage using an expedition liqueur elaborated by the Maison itself, composed of cane sugar dissolved in specially selected wines.
