Unusual grapesThe White 'Dedalo' by Franchina and Giarone is a dry and still white wine made from Trebbiano di Spagna, an unusual typical grape, despite the name, from the Modena area. Lively and vibrant, understandable given the experience with refermented wines from this winery. On the nose, yellow flowers, peaches, citrus notes, and slight herbaceous notes on the finish are perceived. On the palate, it has medium body, lively freshness, and good savoriness, ideal to pair with a typical dish of tigelle and cold cuts
The White "Dedalo" by Franchina e Giarone is born thanks to the territorial enhancement project of Luca Pizzetti, who has been creating his wines in the Franchina and Giarone estates since 2020. These wines are designed to best enhance the Modenese territory, specifically that of Castelvetro di Modena. Human intervention in the vineyard is minimal, in order to preserve the natural stages of development and growth of the plants and clusters, all sealed with love and passion for one’s work.
The pure Trebbiano di Spagna grapes of the White "Dedalo" by Franchina e Giarone come from vineyards located on the first hills of the Modenese territory. The climate in this area is typical of the Po Valley, with hot and humid summers and cold, often damp winters with precipitation that does not meet the water needs of the cultivated land. The soil is compact and mainly composed of clay, producing wines with a strong and structured character, thanks also to the virtuous intervention of man who has been able to reconvert this territory to make itwelcoming for the vine. Once the harvest is completed, the grapes are brought to the winery where spontaneous alcoholic fermentation takes place in fiberglass tanks. It ages for a few months on the fine lees before being bottled.
The White "Dedalo" by Franchina e Giarone appears in the glass as a straw yellow with greenish reflections and a lively, inviting foam. It releases aromas of broom, white-fleshed fruits like peaches, and herbal notes on the finish; on the palate, the body is structured, lively with good final freshness that encourages drinking. It pairs perfectly with sushi and sashimi, fried fish, and light snacks; interesting also with cold cuts and vegetarian dishes. Perfect to share on summer gatherings by the sea at sunset or for light lunches enjoying typical dishes of Emilia cuisine, discovering unique and genuine flavors.
