The White "Primo Fuoco" from the Fattoria di Sammontana winery is a lively and dynamic Trebbiano in purity, perfect for pairing with flavorful fish dishes or Asian cuisine. It is made through a 3-month skin maceration and a 6-month aging in amphora. The bright amber color accompanies aromas of ripe fruit and citrus while the palate enjoys a fresh and tasty sip

“Primo Fuoco” is a series that Fattoria di Sammontana dedicates to the land, understood as the essential home of the vine's roots and as the raw material from which to create necessary artifacts: in the vocabulary of artisans, it is the term that indicates the first firing of clay, through which terracotta is formed, which can then be transformed into different types of ceramics and majolica with subsequent firings. The White represents the orange interpretation of pure Trebbiano.

Fattoria di Sammontana produces White “Primo Fuoco” starting from the native variety that represents the entire Apennine: the selection of the best grapes of Trebbiano Toscano comes from the owned vineyards located in the Montelupo Fiorentino area, a center not far from Florence and included in the landscape of the Chianti hills, just a step from the Arno River that flows just to the north. The alluvial soils are characterized by a strong presence of gravelly and pebbly skeleton, elevated at altitudes between 70 and 150 meters above sea level and planted with a density of about 3,500 vines per hectare. The vines are aged between 30 and 50years, cultivated under certified organic farming and following the principles of biodynamic agriculture, implemented since 2012. The harvest is completed by hand, while in the cellar the indigenous yeasts proceed with spontaneous fermentation, with daily punch downs, inside 500-liter terracotta amphorae: the maceration in contact with the skins lasts for 3 months. After the racking to clean it from the pomace, the White continues its aging again in amphora for a period of 6 months. Bottling is done without filtration.

The White “Primo Fuoco” by Fattoria Sammontana offers a pronounced amber appearance, enlivened by brilliant reflections. The nose impact is intense and articulated, with deep notes of tobacco, tea leaves, and earthy hints that leave a mature fruitiness and a trail of citrus peels in the background. The tasting is immediately characterized by a consistent tannic structure, which integrates with a lively freshness and an elegant mineral nuance. A very refined example of orange wine, to kick off the festivities or accompany any dish.
