“Bolle Bandite” by Carolina Gatti is a famous semi-sparkling wine produced with second fermentation in bottle. It has generous perfumes of citrus fruits, sweet spices, flint and bread crust. The taste is creamy, complex and savory, with a good freshness.

The “Bolle Bandite” from the winery Carolina Gatti is a fresh and jovial sparkling wine produced using the ancestral method of bottle fermentation, that is, without carrying out the subsequent disgorgement required for the Classic Method. This label is obtained from grapes coming from vines about 80 years old cultivated using the bellussera method, an ancient system of the area that protects the clusters from humidity, thus also limiting the onset of fungal infections like downy mildew. The winery is a small family-run business, owning about 5 hectares of vineyards in Ponte di Piave, in the hills of Conegliano-Valdobbiadene in the province of Treviso, now managed with great flair and passion by Carolina Gatti who has abolished systemic treatments and the use of chemical preparations both in the vineyard and in the cellar.

The “Bolle Bandite” is a Prosecco Colfòndo produced with carefully selected grapes in the vineyard and hand-picked, generally towards the second half of September. The clusters are destemmed and softly pressed in the cellar to then carry out the alcoholic fermentation in cement tanks, using exclusively the indigenous yeasts naturally present on the skins. Subsequently, the wine remains in aging on its fine lees, with the addition of only must, for the sparkling process and subsequent bottle fermentation. This sparkling wine does not undergo disgorgement but is offered intact on its natural yeasts as per the ancestral method.

The “Bolle Bandite” by Carolina Gatti presents itself with an intense golden yellow color and a fine, delicate perlage. On the nose, aromas of white-fleshed fruit appear, including pear, fresh citrus notes of orange peel and cedar, floral hints of white flowers and saffron, concluding with a hint of flint, honey, and bread crust. On the palate, it is slim, incisive, dynamic, and lively, characterized by great freshness and a minerality that invites drinking. The finish is of good intensity, with an aromatic persistence, open and fragrant, typical of the grape variety.
