Sangiovese 'Bonsai' from Podere Le Ripi is a gem of this Ilcinese production. The Sangiovese plants are trained as 'bonsai' bushes, intentionally kept low and tiny to maximize fruit concentration. Evolved notes of red fruit, dry Mediterranean scrub that offers balsamic sensations, tertiary hints that speak of evolution: a seductive and classy aromatic profile. The sip, structured yet silky, surprises with its savory character and the bitter finish that cleanses the palate. Complex, to be enjoyed in contemplation or with Michelin-starred dishes
