The Cabernet Sauvignon from the small artisanal Umbrian reality Terra di Rovo represents an original and genuine interpretation in purity of this famous Bordeaux grape variety, processed exclusively in steel to avoid altering its expression with aromas and flavors from wood. Located in the Spoleto countryside, the production approach adopted by the Terra di Rovo estate is genuinely sustainable, with agronomic and oenological operations carried out according to the lunar calendar, as per local tradition.
Terra di Rovo Cabernet Sauvignon comes from only grapes of the same French variety grown under organic conditions, with the utmost respect for the health of the environment and biodiversity. The vineyard was planted using the Guyot method in 2014 at an altitude of 350 meters above sea level, on soils rich in marine fossils and clay veins. The harvest is done by hand in crates generally at the beginning of October, accompanied by a careful selection of the grapes, and the bunches are then transferred to the winery for the operations of destemming and of crushing. Here, the alcoholic fermentation is entrusted exclusively to indigenous yeasts and takes place in stainless steel tanks, the same type of wine containers where the mass remains to mature for about 10 months, after which bottling is carried out without any filtration and without the addition of sulfur dioxide. After an additional two years of aging in glass, the wine is finally ready for release on the market.
The Cabernet Sauvignon Terra di Rovo is of an intense violet-red color. Aromas of dark berries, forest fruits, and oriental spices follow one another on the nose along with herbaceous hints of hay and underbrush. In the finish, fresh balsamic notes emerge. On the palate, it is well balanced between the full body and the juicy freshness, with integrated tannins that add complexity and richness to the tasting context.
