The "Cabernetico" of Tenuta Saiano is a Cabernet Sauvignon with a young imprint. A wine with a smooth drink, supported by fresh Mediterranean aromas and notes of black olive. Made by carbonic maceration, the grapes undergo a slight crushing after five days. On the twentieth day of maceration in whole clusters the must is separated and continues fermentation for indigenous yeasts. A part of the aging is done in old barriques.
