The Capichera, made by the eponymous Sardinian winery, is a true icon wine that represents and synthesizes the style of this famous producer. The Vermentino Capichera is one of the symbolic wines of this famous Sardinian winery, which has been committed for many years to enhancing the typical grape varieties of the area. The Vermentino vineyards are 10-25 years old and are located in the heart of the Gallura region, at an altitude of 120 meters above sea level, with exposure ranging from east to west, in a wild and unspoiled environmental context, dominated by lush Mediterranean scrub. The soils are the result of the slow and progressive disintegration of granitic rocks and silica sands, very draining and rich in minerals. The harvest takes place in September, and the best bunches, selected in the vineyard, are softly pressed. Fermentation occurs in stainless steel tanks, at a controlled temperature of 16/18 °C, lasting about 4 weeks. The wine matures for about six months, mainly in steel and in small part in wood.
The Capichera wine is a splendid expression of Vermentino, fragrant and sunny, which is part of the elite of the best labels of Sardinia. Visually, it presents a light yellow color with beautiful warm golden reflections. Intense and elegant, it captivates the nose with a bouquet characterized by scents of white flowers, aromatic herbs of the Mediterranean scrub, medicinal herbs, thyme, rosemary, yellow-fleshed fruit aromas, ripe peach, iodized hints, and mineral nuances of flint.
