Prosecco Cartizze Extra Dry "DDD" Duca di Dolle comes from vines that are about 70 years old, cultivated in a one-hectare plot on the steep hillsides of Santo Stefano di Valdobbiadene. The sunny exposure facing south always guarantees excellent ripening of the grapes. The particularly valuable calcareous soils allow the Glera to express itself at the highest qualitative levels, with clear finesse and elegance. Manual harvesting takes place towards the end of September and the best bunches are chilled and brought to the cellar to undergo delicate pressing. The first-pressing must ferments in temperature-controlled stainless steel vats and the base wine is transferred to an autoclave for frothing and re-fermentation according to the Martinotti or Charmat Method.
Extra Dry "DDD" Conegliano Valdobbiadene Prosecco Superiore di Cartizze Duca di Dolle is a true excellence of the Marca Trevigiana tradition.
