Champagne “Eloquence” from the small family Maison of Jean Louis Vergnon is produced with grapes from vines cultivated in the territories of the Grand Cru of Mesnil-sur-Oger, Oger, and Avize. The fermentation takes place in stainless steel tanks and after a few months of aging, 20% of reserve wines aged for a long time in barrique is added to the vintage wines. The second fermentation occurs in the bottle according to the Champenoise Method. In the glass, it has a brilliant golden yellow color, crossed by a fine and persistent perlage. The bouquet expresses floral aromas, citrus, ripe fruit, pain brioche, and toasted almond. The sip is clear, tense, and vertical, with a long stretch of great freshness towards a savory and mineral finish.
