Petit Clergeot’s ‘Chevry’ Champagne is a characterful blanc de noirs made from grapes grown in Polisot, in the increasingly popular Aube region. Aged exclusively in stainless steel, it is produced using traditional methods without filtration or dosage, resulting in a crisp, classic palate. On the nose, the focus is on fresh notes such as citrus and flowers, complemented by hints of toasted hazelnut, with great dynamism. The palate is bright, briny and truly long. Perfect with oysters or a platter of seafood
