The Champagne Rosé de Saignée Extra Brut by Emmanuel Brochet is one of those monumental sparkling wines that leave a long-lasting impression. The term "Rosé de Saignée" refers to maceration: the color is obtained with the "bleeding" of the Pinot Meunier skins, which remain in contact with the must for 24 hours, a less common method than blending red and white wines. Intense aromas of citrus and red fruits flow from the glass, which together with hints of butter and pastry are reminiscent of Sicilian delicacies. The Champagne Rosé de Saignée Extra Brut by vigneron Emmanuel Brochet is characterized as a bubbly with an original soul, made according to a handcrafted production approach. It is an expression of pure Pinot Meunier vinified through the bleeding technique, “saignée” in French, a practice adopted in the production of rosé wines that involves taking a portion of must from a tank of red grapes in maceration, which will have already taken on its characteristic pink color more or less intense depending on the time spent in maceration, and then vinifying it without contact with the skins. In particular, this technique is used in Champagne as opposed to the more common practice of blending red and white wines to obtain rosé.

Emmanuel Brochet Champagne Rosé de Saignée Extra Brut is a 100% Pinot Meunier from vines about 60 years old located in the lieu-dit of La Motelle, within the area of Montagne de Reims. The vineyard, planted in 1965, is certified organic farming with a southwest exposure. In the cellar, the must remains for about 24 hours in contact with the skins and the alcoholic fermentation occurs spontaneously in wood due to the intervention of indigenous yeasts. After 11 months of aging in oak barrels, the sparkling base is placed in the bottle for refermentation according to the Champenoise Method, with aging sur lie that lasts for at least 15 months in glass before degorgement and dosage Extra Brut. Throughout the entire process, the mass is not subjected to any clarification or filtration operations.

The Rosé de Saignée Champagne Extra Brut by Emmanuel Brochet is a dark and intense cerasuolo pink. On the nose, aromas of blueberry, orange peel, lemon, and jasmine emerge, with notes of iodine and pastry in the background. Enveloping, savory, and lively is the taste, very persistent and of great elegance.
