Organic and biodynamicExtra Brut "Sonate" by Fleury is a Champagne that represents an important goal for the maison: the first label produced without adding sulphites before bottling. An authentic and pure expression not only of the original terroir, but also of the Fleury philosophy, characterized by respect for the vineyard and less possible intervention in the cellar. Aromas of red fruits, peach and citrus are sustained in the mouth by a menthol, honeyed and slightly boisé sip.
The Champagne Extra Brut Sonate by Fleury is a hymn to purity and depth conferred by a unique terroir and the hand of one of the best producers in the area. When talking about Fleury, one mentions one of the pioneers of biodynamics applied to the vineyard, especially in a region like Champagne, which has always been a victim of the reckless use of chemical or synthetic substances. In 1989, the Maison decided to convert all its vineyards to Steinerian practices, in order to restore an indissoluble energy bond between man and the earth, and the results did not take long to arrive. Today a reference point for those seeking exciting and uncompromising bubbles, the winery continues the practice of degorgement à la main, now a true rarity in the area. Unicum!
The Sonate wine by Fleury is obtained from a blend consisting of 60% Pinot Noir and 40% Chardonnay, the result of vineyards cultivated biodynamically on Kimmeridgian limestone and clay soils. The 15 hectares of vines grow in perfect harmony with the environment and the surrounding life, as they are followed carefully the precepts of biodynamics. After manual harvesting and double selection of the grapes, in the winery 55% of the must ferments in steel tanks, while the remaining 45% in oak barrels. Second fermentation occurs in the bottle according to the Champenoise Method and does not involve any addition of sulfur before bottling. Aging of at least 60 months on the lees.
The Sonate by Fleury already enchants at the visual examination with its bright yellow dress enlivened by golden hues. The nose has the rare gift of combining boundless complexity with innate composure, which the most distracted might mistake for simplicity. It would be a mistake to let slip the hints of golden apple, almond, lime zest, and the crust of freshly baked bread that gradually emerge in the glass. A deep and multidimensional sip, it encapsulates in itself freshness, tension, salinity, and the stride of a champion. A "sonata" that, honestly, we would never tire of listening to.
