The white “Talò” is a pure Chardonnay that is part of the range of wines from one of the most important production realities in Puglia. The San Marzano winery is located in the inland of Taranto and manages about 600 hectares of vineyards from approximately 1200 member suppliers. Founded in the early 1960s, it is now committed to enhancing the native Apulian grape varieties and international varieties that have acclimatized better to the territory. The choice to embark on the path of quality has proven to be a winning choice over time, and today the San Marzano labels represent the guarantee of a capacity to create wines that satisfy the tastes of the most demanding palates, with a focus on international markets and tastes. The “Talò” Chardonnay from the San Marzano winery is produced with grapes from vineyards cultivated at an altitude of 100 meters above sea level, in an area with a warm and dry climate, on shallow medium-textured soils. At the end of the harvest, the grapes are destemmed and undergo a brief cold maceration before soft pressing. Fermentation takes place in steel at a temperature of 15 °C. Before bottling, the wine is aged in French oak barriques for at least 4 months. It presents a bright straw-yellow color. On the nose, it expresses intense aromas of ripe yellow fruit, pineapple, tropical fruit, hints of pastry, acacia honey, and vanilla. The palate is broad, with ripe and satisfying, that stretch harmoniously towards a persistent finish. A mature Chardonnay, to be enjoyed with baked fish, white meats, or with a platter of semi-aged cheeses.
