Chianti Classico Riserva Castello di Cacchiano 2019
The Chianti Classico Riserva from the Castello di Cacchiano winery is a warm, smooth red wine aged for more than 36 months in French oak barrels, tonneaux and barriques. The aging in wood gives it delicate aromas of vanilla, tobacco and sweet spices that, alongside notes of berries, cherry and plum, make up a broad and deep bouquet. The sip is full and enveloping, intense and warm, very persistent on the palate, supported on the finish by soft, well-smoothed tannins. An ideal wine to accompany roasted or stewed red meat dishes
The Chianti Classico Riserva from Castello di Cacchiano is the label that best tells the story of this historic territory in Tuscany, known for producing great reds meant for aging. Sangiovese, the flagship grape of the area, lends itself to creating fresh, fruity, and fragrant wines, as well as to long aging in wood, which enriches the aromatic profile with elegant tertiary notes and softens the tannins. A pleasantly rich and intense red, harmonious and persistent, particularly suitable for tasting with a chianina steak or with roasted or spit-roasted game.
The Chianti Classico Riserva Castello di Cacchiano wine is born in the beautiful hilly area of Gaiole in Chianti, where the Castello di Cacchiano estate cultivates about thirty hectares of vineyards, within a vast property rich in biodiversity. The cuvée is the result of a blend of Sangiovese with a small percentage of Canaiolo, Malvasia Nera, and Colorino. The grapes come from vineyards located at an altitude between 380 and 420 meters above sea level, with a bright south-facing exposure. The vines are cultivated on medium-textured soils, characterized by a significant presence of alberese, which makes them very draining and suitable for quality viticulture based on low yields per hectare. At the end of the harvest, the best bunches are sent for fermentation, which takes place in temperature-controlled stainless steel tanks at 26-30 °C, with a maceration on the skins of about three weeks. The wine matures for 36 months in barrels, tonneau, and French oak barriques from Allier and completes its aging with a few months in the bottle.
The red Chianti Classico Riserva Castello di Cacchiano is a wine of good structure, highlighting the best qualities of a great Sangiovese, coming from one of the most vocated areas of the Chianti region. It appears ruby in color with slight garnet reflections. The aromatic profile is intense and elegant, with aromas of small red berry fruits, floral hints of violet and iris, notes of leather, blonde tobacco, underbrush, humus, and soft sensations of sweet spices. The entry on the palate is harmonious and enveloping, with mature tannins well integrated with fruity aromas of good richness and complexity, leading to a long and very persistent finish
