The Chianti Classico Riserva from the Castello di Cacchiano winery is a warm, smooth red wine aged for more than 36 months in French oak barrels, tonneaux and barriques. The aging in wood gives it delicate aromas of vanilla, tobacco and sweet spices that, alongside notes of berries, cherry and plum, make up a broad and deep bouquet. The Chianti Classico Riserva Castello di Cacchiano wine originates in the splendid hilly area of Gaiole in Chianti, where the Castello di Cacchiano estate cultivates about thirty hectares of vineyards within a vast property rich in biodiversity. The cuvée is the result of a blend of Sangiovese with a small addition of Canaiolo, Malvasia Nera, and Colorino. The grapes come from vineyards located at an altitude between 380 and 420 meters above sea level, with a bright south-facing exposure. The vines are cultivated on medium-textured soils, characterized by a significant presence of alberese, making them very well-drained and suitable for quality viticulture based on low yields per hectare. At the end of the harvest, the best bunches are sent for fermentation, which takes place in stainless steel tanks at a controlled temperature of 26-30°C, with a maceration on the skins of about three weeks. The wine matures for 36 months in barrels, tonneaux, and barriques of French oak from Allier and completes its aging with several months in the bottle.
The Chianti Classico Riserva Castello di Cacchiano red is a wine of good structure, highlighting the best qualities of a great Sangiovese, coming from one of the most suitable areas of the Chianti region.
