The 'Don Baddore' from the Berritta Dorgali winery is a warm and enveloping red wine, born from the union of Cannonau, a native Sardinian grape variety, and Syrah, a popular international grape variety. The result, after 6-12 months of aging in wood, is a wine with a full and smooth taste, dense tannins, and a long and persistent finish, characterized on the nose by a wide and deep aromatic profile featuring notes of cherry, plum, sweet spices, and delicate hints of chocolate. A wine of great character, to be paired with first and second courses where meat is the protagonist.

From the marriage between Syrah and Cannonau comes the red wine ‘Don Baddore’ from the organic winery Berritta di Dorgali, a unique interpretation of this beautiful territory of Sardinia. Syrah is the only non-traditional grape variety cultivated by Antonio Berritta, the owner of the winery that bears his name. This famous international variety widespread around the globe has shown an exceptional ability to adapt to different pedoclimatic contexts, yielding surprising results in the Mediterranean, as demonstrated by various experiences in Sicily and Tuscany.

Berritta Dorgali ‘Don Baddore’ comes from an equivalent blend of Cannonau and Syrah, varieties cultivated according to the principles of certified organic farming. The vines, about 25 years old, benefit from an altitude of 180 meters above sea level and the granitic nature of the soil. Following the manual harvest, which takes place during the first decade of October, the grapes are carefully selected, destemmed, and crushed in traditional wooden vats.for the spontaneous alcoholic fermentation of 30 days in contact with the skins accompanied by repeated manual punch downs. Aging takes place in steel for 8 months, in French oak barrels for 8-12 months and for a few additional months in the bottle before final marketing.

In the glass, the ‘Don Baddore’ from the Berritta Dorgali winery showcases an intense purple-red hue. The aromatic bouquet is broad and complex, characterized by hints of red fruits in jam, sweet spices, tobacco, black pepper, and chocolate. Full and enveloping is the taste, with dense but well-integrated tannins that accompany the very persistent finish on the sensations evoked by the nose. This is a red wine that requires structured pairings, such as dishes based on red meats or game.
