FRANCIACORTA BRUT CA' DE PAZZI DESCRIPTION

Ca' de Pazzi's Brut Franciacorta sparkling wine is the workhorse of this very young producer. A blend of Chardonnay and Pinot Blanc, the nose is dominated by a profile in which fruit and yeasts are the protagonists, interacting on the finish with slight nuances reminiscent of hawthorn scents. On the palate, the sip is direct, with no frills as it aims to immediately conquer the taste buds of those who taste it. It is a label that brings a breath of fresh air to the Franciacorta terroir, demonstrating how original winegrowing projects can still be discovered in this area, and that they are well worth recounting.

This Franciacorta Brut originates from a Chardonnay-driven blend, alongside which, however, we also find a small percentage of Pinot Blanc. The bunches are carefully harvested by hand and then immediately transported to the cellar. After pressing the grapes, the first fermentation takes place in steel containers. Second fermentation then takes place in the bottle, following the production principles of the Metodo Classico. The sparkling wine remains to mature on the lees for 18 months, until the disgorging, dosage and bottling procedures begin.

The Brut Franciacorta by Ca' de Pazzi presents itself to the eye with a beautiful straw yellow colour, luminous and brilliant, crossed by a chain of fine and persistent bubbles. Yeast, bread and small pastries open up the aromas on the nose, which slowly turn towards citrus touches and floral sensations. Medium-bodied in the mouth, refreshing on the palate thanks to a lively and lively sip, from which a slight taste of dried fruit emerges. Excellent throughout a meal, it is perfect with raw fish tartare and shellfish, making for a match you are sure to enjoy!
