The Pas Dosé signed by Chiara Ziliani is born in Provaglio d'Iseo, in the heart of Franciacorta, from Chardonnay and Pinot Noir grapes cultivated in the vineyards owned by the winery. The choice not to dose the cuvée allows an authentic character to emerge, defined by 31 months of aging on the lees. The perlage is fine and continuous, with bright golden reflections, while on the nose it opens up to notes of pear and peach, with citrus hints and scents of white flowers. On the palate, it is enveloping and juicy. To be tried with a tartare of red shrimp
