The Greco "Calpazio" from the San Salvatore winery is a white wine of great freshness, born from a young vineyard of the estate. This ancient Campanian grape variety, generally cultivated in the Tufo area of Irpinia, is proving to express very interesting wines even in the Cilento area, characterized by a milder and sweeter climate, due to its proximity to the sea. Born from the desire to enhance a territory with great potential, San Salvatore immediately chose to focus on the cultivation of indigenous Campanian grape varieties, in particular: Aglianico, Fiano, and Greco. The Greco vines have been planted at the foot of Monte Calpazio, a very special place that guarantees a cool climate and good temperature variations. At the end of the manual harvest, the grapes are softly pressed, and the free-run must ferments in temperature-controlled steel tanks. Before bottling, the wine matures for at least 8 months in steel tanks.
