It is born from the fundamental idea of using only the best Greco grapes grown in the vineyards of Santa Paolina, on soils with a prized chalky matrix, which express grapes of great finesse and elegance. Fermentation takes place in steel tanks, at a controlled temperature of 16/18 °C. The wine then rests, still in steel on its own yeasts, for about 4/5 months, with periodic bâtonnage. It completes its aging with a few months in the bottle before being put on sale.
