Perfect to drink every day"Pignocco" is a Lacrima di Morro d'Alba with a fresh and fruity taste, aged only in steel. The nose recalls the scents of violet, rose, and berries, with a slight earthy nuance. On the palate, it is agile, generous, with excellent drinkability and fragrant, endowed with very fine tannins.
“Pignocco” is the Lacrima di Morro d'Alba from the Santa Barbara winery, born among the 45 hectares of vineyards that rise in the sinuous hills from the municipality of Barbara to Morro d'Alba and Cupramontana. This strip of land opens up between the Adriatic Sea and the Apennine mountain range, landscapes that characterize the labels with savory notes and an excellent sensory range. The winery aims to revitalize indigenous grapes, among which is the Lacrima di Morro d'Alba, alongside varieties that tease the international palate, such as Merlot, Syrah, and Cabernet Sauvignon.
The Lacrima di Morro d'Alba “Pignocco” from Santa Barbara is rooted in clayey and water-rich soils. In the vineyard, the vines, trained to a spurred cordon, are worked only manually from January to October, thanks to the skilled guidance of technicians and farmers. The fermentation temperature, during winemaking, is kept consistently between 23 and 24 degrees, to avoid the development of unpleasant aromas and thus maintaining freshness.Aging, just like winemaking, takes place in steel for a few months.
The “Pignocco” from Santa Barbara is a Lacrima di Morro d'Alba with violet hues on an intense ruby red, characterized by particular aromas reminiscent of blueberry and cherry, with notes of red rose and violets. On the palate, the berries are particularly distinguishable, presenting a fresh and winey sip, endowed with caressing tannins that soften the palate and make it particularly pleasant and smooth. It pairs easily with a lard-cured salami from Fabriano, but also with a first course with white meat ragù or, paradoxically, its lightness and simplicity also pair with fish dishes, particularly blue fish.
