This Trento Spumante Extra Brut Hofstatter originates from a blend where two white grape varieties, Chardonnay and Pinot Bianco, are combined with 20% Pinot Nero. The must obtained from the soft pressing of the grapes ferments for the first time 85% in steel, while the remaining part vinifies in oak barrels. The second fermentation then takes place directly in the bottle, using the Classic Method technique. The sparkling wine then remains to mature on the yeast for 24 months, after which the winery proceeds with the disgorging, dosage, and bottling operations.
