The Negroamaro del Salento “Talò” from Cantine San Marzano is one of the most famous and representative labels of a collection of wines characterized by the desire to enhance the combination between the wonderful land of Salento and the grape varieties historically cultivated in Puglia. It is a red wine with a Mediterranean and sunny character, expressing the best qualities of this grape, highlighting its fruity pleasantness, freshness, and elegance. It is a perfect bottle to bring to the table to accompany a mixed grill or, more generally, to pair with roasts or first courses with meat sauces.
“Talò”, pure Negroamaro del Salento, is the result of the work of over 1200 small suppliers, who form the heart of Cantine San Marzano. The Negroamaro grapes are harvested from the vineyards of the estate, located near San Marzano, at an altitude of about 100 meters above sea level. The clayey soils, with abundant presence of skeleton, and a typically Mediterranean climate, warm and always very windy, constitute the perfect habitat for this ancient grape variety. The harvesting operations take place around mid-September, and the best bunches undergo fermentation in temperature-controlled stainless steel tanks, with selected yeasts and a maceration period on the skins of about ten days. The wine rests in French oak barriques for 6 months and completes its aging with a few months in the bottle.
The red Negroamaro del Salento “Talò” from San Marzano is a symbol wine of Salento, a privileged interpreter of this generous land and its best characteristics. In the glass, it presents an intense purple-red color with youthful and bright violet reflections. On the nose, it expresses a bouquet characterized by fragrant fruity aromas, reminiscent of small dark berries, black currant, blueberry, ripe cherry, hints of underbrush, wild shrubbery of the Mediterranean scrub, aromas of vanilla, soft oriental spices, nuances of medicinal herbs and balsamic plants. On the palate, it reveals a good structure, with soft and evolved tannins, wrapped in a ripe, rich, and harmonious fruit, leading to a fresh and savory finish, characterized by a good taste persistence.
