Organic wines are territorial expressions produced in accordance with European regulations that require the use of grapes from certified organic farming, with strict limits on the use of sulfites and oenological products during vinification. To meet these standards and display the well-known green label with the 12-star leaf certifying organic production, producers must avoid synthetic chemicals and genetically modified organisms in the vineyard. In the cellar, only certified organic oenological products are permitted, with limited sulfite use. Various certification bodies ensure these conditions are met, protecting the integrity of a growing production that is increasingly high-quality, sustainable, authentic, and true to its terroir.
