This Passerina made by the Illuminati winery comes from vineyards located in the municipality of Controguerra, about 260 meters above sea level. Here the terroir is mostly clayey, composed of a loose subsoil. The chosen training method for the vines is the counter-espalier, and the exposure is to the east. After a manual harvest, carried out between the end of September and the beginning of October, the grapes are destemmed and the berries are gently pressed. The must undergoes a static decantation, before fermenting in steel tanks at a temperature between 16 and 18 degrees. The wine ages for two months in steel and for a few months directly in the bottle, thus completing the maturation process.
