Organic and biodynamicThe Passito of Noto by Planeta is a velvety and full-bodied wine, made from Moscato grapes harvested at the end of August and dried for about 40 days before vinification. The result is a golden yellow in the glass, accompanied by intense notes of papaya, yellow fruit, candied orange, orange blossoms, ginger, and almond hints. The sip is sweet and well-balanced, with a pleasant fruity persistence.
The “Passito di Noto” by Planeta is a dessert wine of ancient and noble origins, which has always been part of the history of this splendid area of southeastern Sicily. It is produced with the grape variety Moscato Bianco, introduced by the Greeks on the island and spread in almost all the countries facing the Mediterranean Sea. The warm, dry, and breezy climate has proven perfect, not only for the cultivation of the grapes, which reach maturity with very rich aromatic profiles, but also for the subsequent period of natural drying. The wine is a nectar with soft and complex aromas, with a sweet and alluring sip, well balanced by freshness, making it harmonious and balanced.
The wine “Passito di Noto” is produced by one of the most important names in Sicilian oenology. The Planeta winery has indeed been a protagonist in the rebirth and enhancement of Sicilian wines. In addition to its headquarters in Agrigento, it owns estates in various areas of the island: Vittoria, Noto, Castiglione di Sicilia, and Capo Milazzo, for a total of over 380 hectares of vineyards. The Noto estate was purchased in 1998 and is located in Contrada Buonivini, in a splendid landscape of gentle hills that descend towards the sea among the almond trees. The Mediterranean climate, with very hot and dry summers, is mitigated by the constant presence of sea breezes. The soil consists of white lands of fine-textured limestone matrix, with the presence of light clays and skeleton. At the end of the harvest, the best bunches of Moscato Bianco are dried in a drying room. After about 40 days, the grapes have lost about half of their weight and are ready to be gently pressed. The must, very sugary, ferments slowly in stainless steel tanks at a temperature of 18 °C for about a month. After a few months of aging in steel, the wine is bottled.
The “Passito di Noto” by Planeta is a dessert wine particularly suitable for pairing with small dry pastries or typical Sicilian sweets. To the eye, it presents a bright golden yellow color. It fascinates and seduces with an intense and rich bouquet, expressing soft aromas of dried apricot, tropical fruit, ripe yellow fruit, candied citrus peel, quince, and floral nuances. The sip is smooth with sweet and harmonious aromas that lead to a very persistent finish with good freshness. One of the great excellences of Sicilian tradition.
