The Passito di Pantelleria “Bukkuram - Padre della Vigna” by Marco De Bartoli is one of the best and deepest sweet wines in Italy, a postcard in liquid form that depicts the extraordinary union between Zibibbo and the island of Pantelleria. Marco De Bartoli is best known for being the proponent of the true renaissance of Marsala wine, an extraordinary outpost for the eponymous fortified wines, long mistreated by mediocre productions aimed at filling the shelves of large distribution. Over the years, the vineyard area has also expanded further south, and the acquisition of vineyards in Pantelleria has allowed the De Bartoli family to engage in the production of new wines, including the well-known passito, while maintaining stylistic rigor and evocative power intact. The Passito wine “Bukkuram” is obtained from pure Zibibbo grapes, coming from 35-50 year old bush-trained vines cultivated with very low yields. In the vineyard, operations are conducted with respect for the environment and plants, proceeding with natural sun drying for 50% of the grapes, while the remaining part remains on the vine. At advanced spontaneous fermentation, the previously dried grapes are added and left to macerate for about 3 months. Aging of about 30 months in barrique and 6 months in steel before bottling.
