"Pedaforno" by Cascina Fornace is a brilliant Arneis macerated on the skins for one week that surprises you for its mineral vein and body. Is realized with only Arneis grapes coming from a 60 years old's single vineyard in the heart on Roero area; a terroir that emerges in this wine with its salty and parfumed soul. Only native yeasts and a long aging in tonneaux gives aromas of ripe peaches, dried fruits and salt. The sip is fresh and straight, fresh and big with a lon lasting persistence.  

The “Pedaforno” from Cascina Fornace is a multifaceted and unusual expression of Arneis vinified on the skins, which stands out for its vigor and personality. Enrico Cauda is one of the faces of artisanal Roero who has undeniably contributed to the revival of the area, and the 'Solo Roero' project, which brings together local producers who follow the same philosophy in the vineyard and cellar, is one of those things that benefits the wine world. It goes without saying that enthusiasts turn to Enrico to drink liquids that credibly tell the story of the area, and this transformation of Arneis that some producers have accustomed us to is concrete testimony of that. Continuous experimentation and fervor in Santo Stefano Roero, because classicism does not mean immobility. Just over 16,000 bottles, dedicated to those who want to be told a story while drinking liquids without sophistication.

The white “Pedaforno” is obtained from pure Arneis grapes, with a week-long skin maceration. The vineyard from which the grapes for this white come is splendid, located in Santo Stefano Roero and 60 years old. In the vineyard, no chemical substances, herbicides, or pesticides are used, only a bit of copper and sulfur. In the cellar, fermentation always occurs spontaneously, carried out by only indigenous yeasts, and spontaneous malolactic fermentation. Aging for one year in tonneaux, and no clarification or filtration before bottling.

The "Pedaforno" Cascina Fornace has an intense golden color that shifts towards orange. A pulsating nose, of great originality, ranging from plum to dried fruit with constant salty puffs in the background. Austere in its expressiveness, even on the palate it is a wine that does not get lost in frivolities: quite concrete, it has body and structure enlivened by a refined saline weave that lightens the liquid while extending its persistence. From fish in sauce to well-seasoned risottos, to medium-long aged cheeses.
