The Pentima is a still white wine mainly based on Malvasia Rossa, an ancient clone of Malvasia di Candia, produced with skin maceration for 6 days and a short aging in large chestnut barrels. It has a delicate and deep aromatic profile, with notes of fruit, herbs, and honey, characterized by freshness, savoriness, and persistence. Organic and artisanal wine

proceed with spontaneous fermentation and seven days of skin maceration, to give depth to the liquid. The aging takes place in local chestnut barrels of 6 hectoliters. No clarification or filtration.

The Pentima wine fills the glass with its rich yellow hue, also due to the brief maceration. An intoxicating nose, it engages from the first sniff, presenting in succession bursts of ripe fruit, such as peach and melon, as well as clear mineral hints, reminiscent of flint stone being scraped. A splendid sip, it combines the richness of the fruit with a debilitating and refined salinity, which significantly extends the persistence of the liquid.
