The Pinot Noir Reserve 'Aton' Elena Walch is a Pinot Noir in purity, a great pride of the Alto Adige winery. The Pinot Nero Riserva “Aton” by Elena Walch is one of the best expressions of the Alto Adige land. Elena Walch represents change and innovation in local winemaking, as she has turned her gaze towards the future and environmental sustainability. Today, her daughters Julia and Karoline have officially joined the family business, bringing new vitality and modernity. The work philosophy is focused on respecting the natural phases of growth and development of the plants and raw materials, as well as the surrounding ecosystem of the vineyards, in the name of territorial enhancement and indigenous grape varieties.
The vineyards of the Pinot Nero Riserva “Aton” by Elena Walch grow on soils mainly composed of clay and limestone with the presence of marl and dolomitic rock for a final product with an unmistakable character. Rigid and snowy winters are encountered with sudden frosts often close to spring; summers are hot, sunny, and characterized by significant temperature fluctuations between day and night, optimal for the grapes. The altitude is about 400 meters above sea level and the exposure is south with consistent presence of light and solar heat. The grape harvest is done manually between the end of August and the first ten days of September. In the winery, it macerates cold for 5 days and ferments in steel for 15 days; it is then aged in barrique for 12 months and rests for a year in steel.
To the eye, the Pinot Nero Riserva “Aton” by Elena Walch is a ruby red with intense and bright reflections. The aromas recall berries, licorice and tobacco with an intense spicy finish; on the palate, it is inviting, juicy, and elegant with mineral hints on the finish and a pleasant persistence that entices glass after glass. It pairs well with dishes based on local game, stewed red meat cuts, and first courses dressed with elaborate sauces; perfect with aged mountain cheeses made from cow's milk. Excellent for accompanying important family celebrations or anniversaries or for romantic evenings by the fireplace with good music in the background.
