“Eileen” Pinot Noir is produced by Cristom Vineyards, a prestigious estate located in the Willamette Valley, considered one of the finest areas in the United States and particularly suited for Pinot Noir and Chardonnay. Founded in the 1990s, the winery has made a name for itself in the global wine scene thanks to a range of high-quality labels and a philosophy focused on the enhancement of individual plots, clearly inspired byBurgundian. The grapes come exclusively from Eileen Vineyard, which is located at an altitude of about 200-250 meters above sea level, overlooking the wonderful landscapes of the Cascade Range to the east and the Oregon Coast Range to the west. The climate is very cool due to the constant presence of ocean currents, which promote slow and gradual ripening, ideal for Pinot Noir. The soils are of ancient volcanic origin and consist of basalt flows. The grapes are spontaneously fermented using only indigenous yeasts in open-top tanks. The wine ages for a period of 20 months in oak barrels before bottling.
