Prosecco Frizzante di Valdobbiadene 'Nino' from the Duca di Dolle winery is a delicate and fresh sparkling wine, re-fermented in the bottle according to the ancestral method of Prosecco production. The vineyards, located on green and gentle hills in the Rolle di Cison di Valmarino area in the Marca Trevigiana, are cultivated according to the double upside-down system and treated with the utmost respect for the territory and the final consumer. "Nino" is a Prosecco di Valdobbiadene made from mainly Glera grapes, plus small percentages of Verdiso and Perera from south-facing vineyards with 35/40 year old vines. The winery, which owns around 100 hectares (25 in vines and 75 in woodland) within the Rolle Estate, plus a further hectare in the Cartizze area, is located on the site of an old monastery and strongly believes in the protection of the landscape and environmental sustainability.
Valdobbiadene Prosecco Frizzante "Nino" is produced from grapes harvested by hand towards the end of September with immediate transportation of the grapes to the cellar in order to avoid the occurrence of undesired spontaneous fermentation and to keep the grapes fresh and healthy. The grapes, after being destemmed and separated from the skins by draining, release the must, which is then brought to alcoholic fermentation in stainless steel containers at a low temperature for a few days. Once the fermentation is complete, the base wine obtained is then re-fermented in the bottle for a few months on its own lees without the addition of sugar or sulphur dioxide.
"Nino" Prosecco Frizzante di Valdobbiadene has a straw yellow colour with some greenish reflections and a characteristic veiling given by the yeasts present during the re-fermentation in the bottle. On the nose you can perceive intense aromas of crisp and fresh fruit, including apple, pear and citrus fruits, floral notes of white flowers and bread crust. In the mouth, it is fresh, lean and vertical, with a very pleasant drinkability and slight hints of yeast towards the end. It is truly a sincere, immediate and generous expression of the Prosecco tradition.
