The Prosecco from Valdobbiadene Brut "Cuvée del Fondatore" is the excellence of the Valda winery, dedicated to the founder Sergio Bolla. It is a sparkling wine obtained with the long Charmat Method from a cuvée composed with a small percentage of Chardonnay aged in barrique. The aromatic profile includes hints of vanilla, butter, almonds, and hazelnuts.

The Brut Prosecco di Valdobbiadene Superiore “Cuvée del Fondatore” Valdo is a vintage sparkling wine that represents the qualitative peak of the entire production of the winery. The vinification is particular, involving a wooden processing for the Chardonnay that contributes to giving the final blend – where the undisputed protagonist remains the Glera – a certain character, enhancing the breadth and amplitude of the perlage in the mouth. An original and intense profile is also perceived on the nose, where spicy and buttery notes recall the period of aging in wood and on the lees. It is to be tried when one wants to focus on a Prosecco of undeniable quality. 

September, manually, and the grapes obtained from the destemming of the bunches are softly pressed. The first fermentation takes place in steel tanks, with a resting period in wooden barriques for the Chardonnay; the subsequent sparkling process occurs in autoclave, according to the Martinotti “long” Method, for a total of 12 months on the lees. After bottling and before commercialization, the Cuvée rests in glass for another six months.

This Prosecco di Valdobbiadene Superiore Brut “Cuvée del Fondatore” Valdo presents itself to the eye with a straw yellow color, crossed by some more golden streaks; the perlage is fine, and the persistence is of good duration. The range of notes that envelops the nose presents touches of well-matured white-fleshed fruit, enriched by hints of vanilla and light references to hazelnuts. On the palate, it is medium-bodied, velvety, and creamy, with a sip that brings out a fruity and fresh soul to the taste.
