The Prosecco from Valdobbiadene Brut "Cuvée del Fondatore" is the excellence of the Valda winery, dedicated to the founder Sergio Bolla. It is a sparkling wine obtained with the long Charmat Method from a cuvée composed with a small percentage of Chardonnay aged in barrique. The aromatic profile includes hints of vanilla, butter, almonds, and hazelnuts.
The Brut Prosecco from Valdobbiadene Superiore “Cuvée del Fondatore” by Valdo is a vintage sparkling wine that represents the pinnacle of quality of the entire production of the winery. The vinification process is unique, involving wooden treatment for the Chardonnay, which contributes to giving the final blend – where the undeniable protagonist remains the Glera – a certain character, enhancing the richness and breadth of the perlage in the mouth. The nose also reveals an original and intense profile, where spicy and buttery notes recall the period of aging in wood and on the lees. It is a must-try when you want to focus on a Prosecco of undeniable quality.
The “Cuvée del Fondatore” signed by Valdo is a Brut Prosecco from Valdobbiadene Superiore that comes from a blend where, alongside 90% Glera, we also find a small percentage of Chardonnay. We are on soils composed mainly of clay over a subsoil of sandy marls, at an altitude of about 250 meters above sea level. The grapes are harvested manually in the second half of September, and the grapes obtained from the destemming of the bunches are gently pressed. The first fermentation takes place in steel tanks, with a resting period in wooden barriques for the Chardonnay; the subsequent sparkling process occurs in autoclave, according to the Martinotti “long” Method, for a total of 12 months on the lees. After bottling and before commercialization, the Cuvée rests in glass for another six months.
This Valdobbiadene Superiore Brut Prosecco “Cuvée del Fondatore” Valdo presents itself visually with a straw-yellow color, interspersed with some golden streaks; the texture of the perlage is fine, and the persistence is of good duration. The range of notes that envelops the nose features touches of well-ripened white-fleshed fruit, enriched by hints of vanilla and light references to hazelnuts. On the palate, it is medium-bodied, velvety, and creamy, with a sip that reveals a fruity and fresh soul to the taste. A bottle among the most important produced by the winery, dedicated to the great Sergio Bolla, the one who, more than anyone, believed in the potential of Venetian bubbles, bringing them to success already in the post-war period.
