The "Cuvée 1926" by Valdo is a Prosecco di Valdobbiadene Superiore Extra Dry that originates from the union of Glera grapes with a small addition of Chardonnay. The vines grow in Valdobbiadene – at 250 meters above sea level, rooting in morainic soils – and in Conegliano, in vineyards located at 80 meters high on clayey and deep soils. The grapes are harvested by hand in the second half of September. Fermentation then begins in steel tanks, at a temperature of 10 degrees. The sparkling process takes place in autoclave, following the rules that dictate the production of Metodo Martinotti, and the Prosecco remains on the lees for 3 months.
