The Valdobbiadene Prosecco Brut Nature sui Lieviti ‘Costante 08’ by Bival is characterized as a Classic Method sparkling wine soft and fragrant, an exceptional synthesis between varietal aromas and those derived from aging on the lees in the bottle. In particular, the varieties used for this wine are Glera, a semi-aromatic grape indissolubly linked to the history of Prosecco, which by regulation must represent at least 85% of the final blend, and Bianchetta Trevigiana, a variety once very popular and now relegated to a secondary role.
The ‘Costante 08’ Bival Prosecco Valdobbiadene Brut Nature sui Lieviti is produced with a solid base of Glera, combined with 5% of Bianchetta, varieties grown on the steep hills of Valdobbiadene. After the harvest, carried out entirely by hand between the second and third decade of September, the whole bunches are subjected to a gentle pressing, with the must thus obtained undergoing spontaneous alcoholic fermentation in temperature-controlled stainless steel tanks, thanks to the sole intervention of indigenous yeasts. The sparkling base it matures for 7-9 months on the fine lees before undergoing secondary fermentation in the bottle according to the Metodo Classico, combined with an additional 8 months of aging on the yeasts. After this period, the sparkling wine is finally marketed without undergoing any disgorgement.
The Valdobbiadene Brut Nature Prosecco on the Yeasts Bival ‘Costante 08’ has a straw yellow hue with fine and persistent bubbles. The nose offers pleasant hints of apple, wisteria, acacia honey, and mountain herbs, aromas supported by nuances of bread crust due to prolonged contact with the yeasts. On the palate, it is dry and lively, with a brilliant freshness that gives even more momentum to the mineral and delicately aromatic finish.
