The Prosecco di Valdobbiadene Superiore Extra Brut "Rive di Santo Stefano" by Val d'Oca is one of the most prestigious labels of the Treviso winery. The term “Rive” is, in fact, reserved for the best plots in the Prosecco Superiore area, with vineyards cultivated on steep slopes and therefore better exposed and more draining. The Glera grapes come only from the prized area of Santo Stefano and are vinified and then sparkling made according to the Martinotti or Charmat method, which enhances its delicate floral fragrances and elegant fruity aromas. The Brut dosage makes the wine very suitable for pairing at the table with appetizers, seafood first courses, or vegetables.
The "Rive di Santo Stefano" is a Prosecco di Valdobbiadene Superiore made by an important cooperative reality in the Valdobbiadene area. Val d’Oca brings together about 600 member conferers and manages nearly 800 hectares overall, producing a wide range of Prosecco labels. Extra Brut "Rive di Santo Stefano" by Val d'Oca is a Prosecco di Valdobbiadene Superiore, which best expresses the mature richness of the Glera grape and the typical pleasantness of this sparkling wine, which has now conquered the palates of enthusiasts all over the world. After a delicate pressing of the grapes, the must is fermented in temperature-controlled stainless steel tanks. After a few months of maturation, the base wine is transferred to an autoclave for the sparkling process and for refermentation according to the Martinotti Method.
