The goal of the estate, founded in 1921 and now led by Cosimo Varvaglione along with his wife Maria Teresa and their children, is to enhance the heritage of native grape varieties of Puglia, working the grapes in pursuit of the highest achievable quality. In this vision lies the Rosato del Salento ‘12 e Mezzo’, a wine that reaffirms the great vocation of the territory towards rosés, characterized by an alcohol content of about 12.5%, from which the name of the collection derives.
The ‘12 e Mezzo’ Varvaglione Rosato del Salento is produced with pure Negroamaro grapes grown in the Mediterranean climate that distinguishes the Salento territory. In the winery, the bunches undergo a short cold skin maceration directly in the press, followed by the operation of cleaning the must. The subsequent alcoholic fermentation process takes place in stainless steel tanks at a controlled temperature of 15 °C, until reaching a an alcohol content of 12.5%, at which point fermentation is stopped by a sudden cooling. Still in steel, the wine then matures on the fine lees for several months, during which the lees are periodically suspended.
The Rosato del Salento ‘12 e Mezzo’ from the Puglian reality Varvaglione is a pale pink color with brilliant violet reflections. The aromatic profile is outlined by pleasant and delicate aromas of fresh fruits like strawberry and pomegranate, enriched by floral notes of rose petals. A fresh and lively sip, with excellent momentum and pleasantness, endowed with a coherent fruity and floral finish.
