
'Saldalama' Podere Sottoilnoce
ArtisanalThe “Saldalama” from Podere Sottoilnoce elegantly and simultaneously embodies the rusticity, conviviality, and genuineness of the Emilian tradition, strong with its territorial sparkling wines refermented in the bottle. Emilia has always produced refreshing sparkling nectars with the grapes offered by the territory, bottling a must with a slight residual sugar inside, ready to referment with the first spring warmth: this type of winemaking has ancient peasant origins, so much so that it has been renamed “ancestral method”. This represents an unusual union between very different grape varieties, a principle that inspires the illustration of its label.
And it is here in Castelvetro that Max Brondolo vinifies his “Saldalama”, nurturing his vines from Podere Sottoilnoce, an agricultural estate named for the presence of a walnut tree that stands tall in the middle of the main vineyard, from which the “Confine” is obtained, that is, its flagship bottle. All the lands are characterized by a red color, of loamy and are worked in biodynamic management, without any use of synthetic chemicals. Biodiversity is also protected thanks to the presence of wildlife, shrubs, spontaneous vegetation, and unspoiled woods.
The “Saldalama” by Max Brondolo from Podere Sottoilnoce dresses in a bright ruby red color and releases a consistent and airy violet foam upon pouring: at the first olfaction, it immediately reveals its sensory profile frank, territorial, and regenerating, expressing identity aromas of ripe cherries, blackberries, and wild strawberries enlivened by herbaceous hints and delicate spicy details. On the palate, it is refreshing and nothing short of juicy, with torrential drinkability and a satisfying aromatic finish that brings you back for another round of glasses among the amenities of the Modenese countryside.
