The Saumur “Le Clos de Moulin” from Domaine des Roches Neuves is a white wine from the western part of the Loire Valley, made with pure Chenin Blanc grapes. The wooden vinification contributes to making the wine's bouquet aromatically rich and complex, while preserving a sip that enhances the great freshness typical of the famous French grape variety. It is a structured and important white, to be enjoyed with fish with flavorful flesh or with second courses of white meats.
“Le Clos de Moulin” from Domaine des Roches Neuves originates in the central region of France, in the territory of Varrains, a small village of the Appellation Saumur. The area is particularly suited for viticulture, due to the presence of soils of gypsum-tuffaceous origin and the cool continental climate, mitigated by the presence of the great river that crosses the center of France from east to west. The estate of the Domaine extends over about 22 hectares, managed since 1993 according to the principles of biodynamics. Even in the winery work, there is an effort to limit human intervention to the bare minimum, in order to enhance the vineyard's product. Chenin Blanc is grown right on the banks of the Loire, on soils characterized by the abundant presence of clayey sands, which rest on a limestone subsoil. The grapes are gently pressed and the must is fermented directly in 600-liter wooden barrels using indigenous yeasts. The wine matures on its own lees in wood for 9 months before being bottled.
The wine “Le Clos de Moulin” is a white that well illustrates the tradition of the Saumur area in producing high-value labels based on the indigenous grape variety of the territory: Chenin Blanc. In the glass, it presents a straw-yellow color with brilliant golden reflections. The bouquet expresses floral scents, aromas of ripe fruit, soft sensations of honey, notes of candied citrus peel, hints of star anise, and spices. On the palate, it is broad and enveloping with rich and intense aromas, perfectly balanced by a zesty freshness.
