SAUVIGNON CANTINA DI CALDARO KALTERN 2022 DESCRIPTION

The Sauvignon Blanc from Cantina di Caldaro is a fresh white wine, slightly aromatic, and pleasantly fruity. The French grape variety Sauvignon Blanc expresses itself very well in South Tyrol, and the vinification solely in steel enhances its characteristic varietal notes, offering a bouquet with floral and citrus tones, along with hints of tropical fruit. Its refreshing vitality makes it enjoyable and versatile in food pairings, especially with asparagus, vegetable dishes, shellfish, and seafood appetizers.

The white Sauvignon from Caldaro is produced with grapes from vineyards cultivated in hilly areas with a south-facing exposure, located between 350 and 450 meters above sea level. The possibility of choosing from the numerous plots in the vast heritage of vineyards managed by the Cantina in the Lake Caldaro area allows for producing harmonious and balanced wines every year. The cool climate and highly draining calcareous-clayey soils have proven suitable for Sauvignon. The vines are partly trained using the Guyot system and partly in pergola, yielding no more than 70 hectoliters per hectare. The harvest takes place when the grapes are perfectly ripe, and after destemming, a cold maceration at 10 °C for 8-10 hours is carried out. This is followed by gentle pressing and the start of fermentation of the free-run juice in steel tanks at a controlled temperature of 16-18 °C. The wine matures on fine lees in steel tanks for 4 months before being bottled.

Cantina di Caldaro's Sauvignon is the classic mountain white wine with a fresh and mineral profile that preserves all the varietal characteristics of Sauvignon. It's a delicate wine that emphasizes elegance and finesse, a true interpreter of the wonderful terroir of South Tyrol. The colour is straw yellow, with slight greenish reflections. On the nose, it impresses with notes of white flowers, elderflower, and gooseberry, giving way to riper fruit aromas and exotic hints. On the palate, it is slightly aromatic, fresh, and savoury, with a finish of good persistence.
