Sauvignon 'Kinesis' Baron di Pauli 2021

The Sauvignon “Kinesis” by Baron di Pauli is a white wine with an elegant profile, where the degree of aromatic intensity achieved by the wine is appreciated, enhanced by a fresh component that makes the drinking experience – rich and satisfying – easy to enjoy. A label where the nose is varietal thanks to the vegetal hints that characterize the Sauvignon grape in its typicity, also seasoned with exotic returns where fruit takes center stage. A refined white, which always makes a good impression at the table.

 “Kinesis” signed by Baron di Pauli is a Sauvignon that is cultivated near the Hofl unterm Stein farm in Sella, in a district of Termeno, about 500 meters above sea level. We find ourselves in a terroir composed mainly of limestone and clay. The must obtained from the gentle pressing of the grapes is macerated in contact with the skins for a total of 12 hours, then fermented in stainless steel containers. The aging takes place in steel on the fine lees for 5 months, at the endof which the wine is ready to be bottled and marketed.

The white wine “Kinesis” signed by the Baron di Pauli winery presents itself visually with a bright straw yellow color, endowed with a particularly inviting light. Concentrated and crisp is the ensemble of aromas that envelop the nose, where vegetal varietal notes alternate with more fruity scents, enriched by hints of spices. On the palate, it is medium-bodied, with an intense sip that envelops the palate thanks to a fresh and savory taste, which coherently recalls the aromas already perceived during the olfactory analysis. A label that tells the absolute harmony sought by the winery, which has been committed to producing quality wines in Alto Adige for over 300 years.
