The white wine from Trentino, Sauvignon, produced by the La Vis winery, is a beautiful manifesto of the starting variety used. It is indeed an educational bottle, where the typical aromas of the grape variety – tomato leaves and aromatic herbs – are distinctly perceived, while on the palate, a refreshing sip dominates. A label that is very enjoyable to drink and pairs well with fish cuisine. It also truly impresses with its excellent quality-price ratio.
This Sauvignon is made from grapes cultivated using the Trentino pergola system within the vineyards located near the small municipality of Giovo, at about 300-450 meters above sea level. Here, the soil presents a clayey-sandy matrix. The clusters, carefully selected during the harvest phase, are destemmed and the berries pressed. Static decantation follows, and fermentation occurs for 90% of the mass in steel, while the remaining part ferments in wood. This coordinated use of steel and wood continues during the aging phase with the same.proportions, for a period of 5-6 months during which the wine remains on the fine lees.
The Sauvignon from La Vis presents itself in the glass with a color reminiscent of straw yellow. The aromas enveloping the nose move on typically varietal notes, with vegetal and citrus touches alternating with deeper scents of aromatic herbs and tomato leaf. On the palate, it is light-bodied, with a smooth sip characterized by a refreshing and mineral taste; it finishes with a good persistence. A bottle with which the La Vis cooperative presents us one of the classics of Trentino viticulture.
