The Sauvignon "Merus" from the Tiefenbrunner winery is a white wine based on simplicity, finesse, and expressiveness, both varietal and territorial. It represents one of the facets of the “white berry” of Alto Adige, a land known for producing grapes characterized by freshness and aromatic finesse. The personal touch of the Tiefenbrunner winery refines and enhances what nature provides. Every activity carried out both in the cellar and in the field prioritizes respect and protection of the environment, which is allowed to express itself in the greatest possible transparency.
Tiefenbrunner Sauvignon "Merus" is made from 100% grapes of the same variety. They come from vineyards located in the hilly areas of Cortaccia, Penone, and Niclara, at an altitude ranging from 290 to 500 meters above sea level. The vines are exposed to the Southeast and grow on soils composed of limestone gravel and moraine sediments. The harvest is done manually, allowing for the transport of intact bunches to the cellar andquality. Once pressed, the obtained must is placed to ferment in steel containers. 4 months of resting on its own yeasts inside steel containers define the maturation phase, before bottling.
The Sauvignon Tiefenbrunner has a bright straw yellow color, with greenish reflections. Its aroma shows an herbaceous imprint reminiscent of nettle, sage, and mint, against a background of elderflower. On the palate, it reveals all the freshness of its youth and spontaneity, already enriched by a beautiful balance. It has a full body and a crisp sapidity. It is a white wine designed to accompany moments of carefree enjoyment and companionship, but also to partake in a traditional Alto Adige lunch, of which this Sauvignon is an integral part.
