The Brut Nature "12 mesi" by Il Farneto is a Sparkling Wine from Emilia made with a combination of autoctonous and international grape varieties, produced according to the Classic Method and aged for 12 months on the lees. The Brut Nature "12 mesi" sparkling wine from the Il Farneto winery is a Metodo Classico produced in Emilia with the white grape varieties Spergola and Chardonnay. The brief aging on the lees allows the varietal fragrance of the grapes and their floral and fruity aromas to be preserved. It is a perfect label to uncork at aperitif time or to accompany appetizers or dishes of fish with white meat, with a delicate taste and simple cooking methods.

The Brut Nature "12 mesi" is a Metodo Classico sparkling wine produced near Reggio Emilia. Founded in the 1990s, the Il Farneto winery has immediately distinguished itself for its particular attention to the environment and the quality of work in the vineyard, conducted according to the principles of biodynamics. The same care and attention is given to the winery, in an effort to preserve the qualities of an excellent raw material. The vineyards of Spergola and Chardonnay are cultivated on the hills between Scandiano and Canossa, at about 250 meters above sea level, with an east-facing exposure. The vines have been planted using the Guyot method on soils mainly composed of sandstones and clays. At the end of the harvest, the whole grapes undergo soft pressing to extract only the free-run must. Fermentation occurs spontaneously with only indigenous yeasts in temperature-controlled stainless steel tanks. After a maturation period of a few months, the final cuvée is created, and the second fermentation takes place in the bottle according to the Metodo Classico, with the addition of only free-run must. The wine rests on the lees for 12 months before disgorgement.

The Metodo Classico Brut Nature "12 mesi" Il Farneto is a sparkling wine that seduces and conquers with its lively freshness and the delicacy of its aromas. In the glass, it presents a bright straw-yellow color. The perlage is fine and continuous. On the nose, it expresses floral scents, hints of bread crust, and aromas of white fruit. On the palate, it is lively and crisp, characterized by a creamy and pleasant sip. The finish is dry, fresh, and has good taste persistence.
