The "700slm" Classic Method from the Sicilian winery Cusumano is a Sparkling wine from the mountains, as its grapes are indeed grown at 700 meters above sea level, as the name suggests. The glass is filled with an intense straw yellow while the nose is intoxicated by the typical aromas of the two grape varieties that compose it: red fruits typical of Pinot Noir and white flowers characteristic of Chardonnay. The Metodo Classico Brut '700 slm' by Cusumano is a Sicilian mountain sparkling wine, its particular name hints at a very important piece of information: the grapes that give it life are grown at 700 meters above sea level. This winery is one of the most well-known and recognized Sicilian realities and is located in the Palermo area. It owns 520 hectares of vineyards divided into four main production areas that allow it to cultivate different grape varieties and thus possess a very varied range of labels. 

The '700 slm' sparkling wine by Cusumano is made from a blend of Pinot Nero and Chardonnay. As previously mentioned, these grapes are grown at altitude, 700 meters above sea level, which is why we can define it as a mountain sparkling wine. The soils are clayey and allow for optimal drainage of water, providing complex olfactory sensations, and a sip endowed with pleasant softness and excellent longevity. After pressing, fermentation is carried out in steel at controlled temperature of only the free-run must for a duration of 5 months; the wine then undergoes a second fermentation in the bottle and ages 36 months on the lees.

The Metodo Classico '700 slm' displays in the glass an intense straw yellow and a fine and persistent perlage. The nose is engaging and the notes released are those typical of the two grape varieties used as aromas of berries and flowers, with an underlying scent typical of leavened products. On the palate, it expresses a good body and refined harmony, the olfactory sensations are also found in the sip which is long and persistent. This sparkling wine pairs easily with appetizers or raw fish, thus bringing you back to the sea in an instant while reminding you of the freshness of mountain excursions.
