The Spumante Metodo Classico Pas Dosé from the renowned Alto Adige winery Franz Haas is characterized as a sparkling wine with a vibrant and refined personality produced solely from Pinot Nero grapes, a noble variety of Burgundian origin that has always been at the center of the estate's attention. In fact, the Haas family, which has been dedicated to viticulture for over 140 years among the imposing peaks of Alto Adige, is considered one of the leading interpreters of Pinot Nero in Italy, a grape variety that is skillfully crafted by the Haas family according to different styles and types, including this fascinating Metodo Classico.
The Metodo Classico Spumante Franz Haas Pas Dosé is made exclusively from Pinot Nero grapes grown at an altitude of between 750 and 1,150 meters above sea level, on mixed dolomite and porphyry soils with a southern and south-western exposure. In the winery, the grapes are partially pressed whole and partially destemmed, with the resulting must that ferments and matures for about 6 months in stainless steel tanks. In the spring following the harvest, the sparkling base is then placed in bottle and added with tirage syrup for the sparkling process according to the Metodo Classico, associated with about 48 months of aging on the lees in glass. Followed by disgorgement and the subsequent topping up with the same wine, thus without any dosage.
To the eye, the Pas Dosé Metodo Classico Spumante by Franz Haas reveals a bright yellow hue with golden reflections and fine, persistent effervescence.
