The Classic Method Rosé Brut "50 Months" from the Terrazze dell'Etna winery is an elegant intense and very mineral sparkling wine produced in the Bocca d'Orzo area in Randazzo, within the Etna Regional Park. A blend of grapes where Pinot Noir, predominantly present, joins Nerello Mascalese, an indigenous variety of this wonderful territory. The vines, aged between 10 and 15 years, are trained using the espalier method on small terraces supported by dry stone walls and palmenti, surrounded by oak and chestnut woods, at altitudes between 750 and 950 meters on volcanic lava soils on the northern slope of Etna. The winery is a reality of 38 hectares of vineyards established in 2008 from the acquisition of small plots by the Palermitan engineer Nino Bevilacqua, who today relies on the consultancy of the famous oenologist Riccardo Cottarella to produce wines of the highest quality in respect of the territory.
The "50 Months" Classic Method Rosé Brut from Terrazze dell'Etna is a vintage sparkling wine produced with carefully selected grapes harvested by hand towards the end of August. The bunches, upon reaching the winery, undergo a brief cold maceration on the skins to extract the color before pressing. The alcoholic fermentation then takes place in temperature-controlled stainless steel containers for several weeks. The base wine thus obtained is bottled and added with liquor de tirage for the sparkling process with secondary fermentation in the bottle and aging of the wine on its own yeasts for at least 50 months. Subsequently, disgorgement is carried out by hand, and the addition of liquor d'expedition is made to reach the desired dosage level, as per the brut category.
