Cinque Campi’s Spergola Spumante ‘Particella 128’ is one of the few classic method sparkling wines produced from Spergola, a native grape variety of the Reggio Emilia province. Three days of maceration on the skins prior to the second fermentation produce an intensely macerated base wine with a vibrant aromatic profile, before spending a year in the bottle for refermentation. The nose offers white fruits, hints of citrus and a distinct mineral note. On the palate, it is fresh, crisp and savoury, with a fine, persistent perlage. Perfect with herb tortelli served with butter and Parmesan
